Due to similar cooking times, lentils are frequently cooked with rice. Across Europe and the Americas, lentils are often added to soups and salads for added texture and nutrition.
The top five exporting countries in the lentil trade are Canada, Australia, Türkiye, the United States, and Russia. Together, these countries accounted for an impressive 87.1% of all lentil export value in 2023—highlighting the highly concentrated nature of this global trade segment.
By region, North America led in lentil exports with shipments valued at $1.95 billion, representing 42.8% of global sales. Oceania, largely driven by Australia, followed with 28%, and Asia contributed approximately 20%. The remaining exports originated from Europe (6.6%), Africa (2.4%), and Latin America (0.1%), excluding Mexico.
