Cuba is the largest island in the Caribbean, covering an area equivalent to one-fifth of France. Key features of Cuban rum production include the requirement to use Cuban molasses or sugarcane juice. Unlike many Caribbean regions, all rum in Cuba undergoes column distillation. Before the mid-19th century, pot stills were prevalent, later replaced by column stills. The distilled spirit is separated into two concentrations: 75% or 95%. The percentage may vary slightly between different distilleries.


The spirit distilled to 75% is called aguardiente. It is typically aged for two years in white oak barrels (American ex-bourbon barrels or new barrels). The Maestros de Ron or rum masters of the distillery refer to it as "madre" or "mother."


The madre is then blended with sugarcane wine, and the resulting mixture is rebarreled for further maturation. Depending on the proposed aging scheme, the madre may be blended with sugarcane wine multiple times and rebarreled each time for additional aging.


Cuba has around a dozen rum distilleries. More well-known and easily accessible rums include Havana Club, Santiago de Cuba, Legendario, Cubay, Mulata, Varadero, Santero, Pacto Navio, and Perla del Norte.


Cuban rum is typically aged for three years. Currently, most export-oriented rum producers offer rums aged from 5 to 15 years. A few, led by Santiago de Cuba, have released 20 YO and 25 YO expressions.
